Espresso is made by forcing pressurized (nearly boiling water) hot water through very finely ground and compacted espresso coffee beans using a espresso maker. A average home barista (home espresso machine) runs around $400 with the best espresso machines running the in the $1,500 to $2,000 range.

Yes, yes! I know the term barista (from the Italian for “bartender”) is a person, usually a coffee-house employee, who prepares and serves espresso-based coffee drinks. Many coffee shops officially use the “barista title” for their espresso makers as I have here.

The best espresso machines produce an almost syrupy beverage by extracting both solid and dissolved components from the coffee. It also produces that wonderful crema, (foam) by emulsifying the oils in the ground coffee into a colloid, which does not occur in other brewing methods.

When compared to any other coffee brewing methods, the best espresso machines produces a thicker consistency, a higher concentration of suspended solids, and the crema. As a result of the espresso maker pressurized brewing process, the flavors and chemicals in a normal cup of espresso are very concentrated.

The espresso can then be used as the base for many other drinks, such as a latte, cappuccino, macchiato, mocha, or americano.

There is no set standard that defines the process of extracting espresso. There has been a battle through the years about the amount and type of ground coffee that should be used, how hard to tamp the finely ground coffee, the water temperature, amount of pressure of the water and the rate of extraction.       • The semi-automatic, where the pressure is applied automatically but brew time is selected by the bartender.
      • The automatic or full, where the brew time is also preset (but preparing the grinds is still manual)
      • The super-automatic, where the bartender needs only to load the beans and push a button, but is otherwise completely automated.

Espresso is a notoriously finicky beverage, and thus making the best espresso is considered a skilled task. Preparing the shot involves:

      • Adjusting the grind of the beans.
      • Dosing – the amount of coffee used in the shot.
      • Tamping – pressing down the espresso in the basket.
      • Other preparation of the grounds (such as leveling, tapping, or stirring)

All this done with love in the hope of obtaining that perfect, desired extraction from your home espresso machine.

So the question is, are all espresso machines really espresso machines?

There are many machines out there that are labeled “espresso machine” but are not really a true espresso machine and are far from the best espresso machines. These wannabe machines are generally electric style machines that rely on steam pressure not a pump to force water through the ground coffee. Makes a nice cup of coffee but doesn’t even come close to the best espresso machines for the home.

See the wannabe’s steam pressure is only capable of building up to 1.5 to 2 bar or 50- 65 PSI (pounds per square inch) of pressure. With this limited pressure you are not going to be able to force the hot water through a lot of compact coffee. The extraction is not going to be very complete and you will get a strong cup of coffee but a weak cup of espresso.

The best espresso machines depending on their size will produce a minimum pressure of 9 bar or 135 PSI. This forces the water through the finely ground and compacted coffee grounds. The steam driven wannabe’s are the ones you see sold in department stores for $200 or less. Don’t waste your time. It will eventually end up at a Goodwill.

A TRUE espresso machine is pump-driven or lever operated to build up the pressure needed. The best espresso machines on the market today are pump-driven so you can get up to 15 bar or over 200 PSI. The rule of thumb when it comes to finding the best espresso machines: the more you’re willing to pay - the more you get either in features, design, longevity or performance.

Only you can decide what your price range is. The more you use your espresso machine on a daily basis the more money you need to spend on it. The best espresso machines, will have more commercial grade parts in them. This helps with longevity and ease of repair.
